I absolutely loved this. Really.
If you’re not a fan of tuna you’re probably turning away in disgust right now, but if you don’t mind the fishy stuff then you’ll love this too. I’ve had this recipe in my ‘to try’ pile for a very long time and now I wish I had made it sooner.
With no pasta and no bread crumbs it’s a perfect meal for my 60 day challenge. The almond meal and cheese browned beautifully on the top, so I didn’t feel like I was missing the usual bread crumb topping at all.
The recipe calls for cooked asparagus spears so you can use tinned asparagus (which I’m not a fan of) or you can use fresh stalks and just roll them around in a non-stick frying pan until they are browning slightly.
