This salad was perfect.
After finishing my Salad in a Jar lunches, I was looking for something a little different that would still satisfy my salad-crunch craving, and this hit the spot. Broccoli is actually one of my favourite vegetables but I’ve never really enjoyed it raw until now. This salad was the perfect blend of crunchy and creamy with a generous sprinkle of crispy bacon bits and cashews.
I’m still finishing off my jar of Paul Newman’s Own whole egg mayonnaise (my all-time favourite), but if you would like to make your own Paleo mayonnaise there is a great recipe here on Eat Drink Paleo.
This salad is best served immediately at room temperature so if you’re taking it to a BBQ or picnic you might like to take all the bit & pieces and assemble just before serving.
