Day 10

This is a recipe that I used to cook all the time, but it hasn’t made an appearance on our weekly meal plan for a good 12-18 months.  I suspect we may have overdosed on it at one point and decided to give it a miss for a while.

This was the first time I had cooked it in the slow cooker and it turned out beautifully.  I was worried that the sweet potato would turn to mash, but it held its shape really well.

Worth a try if you’re looking for a simple vegetarian option.  Reduce the curry paste if you like your curry to be quite mild.

    Hi. I just came across this site and love the slow cooker recipes! I can’t wait to try some.

    I was just wondering with this one, are the lentils you use canned, dried, or soaked or..? I always have troubles with lentils. Putting dry ones into things they never seem to soften up and I have tried soaking them too with the same problem. I’ve never tried canned ones though… My googling tells me maybe the ones I tried were too old. (I mostly have tried the dried Mckenzie ones from Coles.)

    Any advice?

    Hi Molly – I just used dried lentils (McKenzie ones too!). This recipe cooks for such a long time that you shouldn’t have any trouble with them not softening up.
