Slow cooker stuffed pumpkin

Slow cooker stuffed pumpkin HLH

Day 31

Happy Halloween!  Even though we don’t really celebrate Halloween in Australia, I still thought it would be nice to get in the spirit and save my slow cooker stuffed pumpkin especially for this occasion.

Originally a Jamie Oliver recipe, I’ve made this many times before but this is the first time I added bacon and cooked it in the slow cooker.  Let’s just say that I won’t be cooking it any other way from now on.

We’re not finished just yet…

Even though this is the last recipe in my 31 day slow cooker challenge, tomorrow I’ll be posting a behind the scenes look at the last 31 days.  See you tomorrow!

Looks good. And this is called butternut squash in the U.S.; one of my favorites!

Have this in the slow cooker right now! Looks yum…

Also just wanted to say thanks for your recipes….I stumbled upon your site and I have tried a few of your recipes this week – baked potatoes were a hit as was the sweet pot & lentil curry.

This looks delicious! Going to try. Do you just putthe rice in raw?

That’s right Jen. The raw rice steams in the pumpkin and comes out perfectly cooked and fluffy.
