Slow cooker spinach & ricotta lasagne

Spinach & ricotta lasagne HLH

Day 14

This was pretty incredible.  In fact it was a race to get the lasagne made because my boys were stealing the tomato and pesto sauce by the (sloppy) spoonful!

We’ll be making this again, although next time I think I’ll add a Béchamel sauce to the top.  I haven’t had a chance to try it this way yet and I’m not sure how well the Béchamel sauce would set, but it’s worth a try.

You will definitely need to use a foil liner with this recipe and I also recommend brushing the foil lightly with olive oil.

This turned out great! It was easy and not as heavy as a traditional lasagna. Cooked mine on high for 3 hours and then low for the remaining 2 hours. Great recipe!

OMG…just made this…ate it!! My kids even ate it! They have never eaten lasagna before and they loved it! I chose this because it had pesto and they both like pesto sauce.
    Thanks…I’m full 🙂
