This is a really nice chicken recipe with heaps of flavour that can be used so many different ways. I decided to shred it through a warm pearl couscous salad and it was fantastic. Hubby went back for seconds and the little balls of couscous were a thrill for the boys.
I had never cooked with pearl couscous before and I just followed the directions on the box which said to brown an onion, add the couscous and chicken stock and boil for 10 minutes. I liked it so much that I bought another 2 boxes to have on hand in the pantry. Highly recommended!
PS. Don’t be shy with the parmesan.
