Day 8

This is one of the first meals I learnt to cook when I moved out of home (other than scrambled eggs and packet cake mix).  It’s a family recipe that came from my Nana and was passed onto my Mum and then to me.  I love that the smell of this rich BBQ sauce always reminds me of meatloaf dinners as a kid.

As for this being photographed in a sandwich – I think we can all agree that meatloaf isn’t pretty and this was about as pretty as it was going to get.  Besides, meatloaf is fantastic the next day!

    Just tried this on the weekend. A great hit! Yum.

    My only problem was the foil. The meat stuck to it and the sauce (which tasted delicious – wasn’t sure about adding coffee but I did!) also made the meat stick to the pan. It was hard to clean. Maybe I cooked too long?

    Hi Olga, I haven’t had too much trouble with it sticking to the foil. Maybe try brushing the foil with a little oil first next time. The coffee seems weird I know but gee it’s good! For any tough spots to clean, sprinkle with bicarb & use a soft brush & vinegar. Should come right off.
