In the words of Jane Kennedy, this is like a traditional Spanakopita without the ‘boombah’.  That is, all the deliciousness of spinach, feta and spring onion without the butter and pastry of the traditional version.

It might not be pretty to look at but I was really surprised by how much I enjoyed this dish.  I had it with some reheated bacon-wrapped baked eggs for lunch and it was such a nice meal.  I could almost feel my Popeye muscles growing by the time I finished!

Don’t skimp on the lemon juice and spring onion – they make the dish.

    How funny is that – yes, we are on the same wavelength! I really like Jane Kennedy’s books. My kind of recipes – simple ingredients, simple to cook. Hope you like this one.
