I’ve found so many great new recipes and food ideas from conversations with my friends and this recipe is one of these. I’m in a breakfast rut at the moment and a girlfriend suggested a quiche/frittata ensemble in the morning. I remembered seeing a recipe for baked eggs in one of my recipe books recently and thought it was a good place to start.
Well, these were brilliant! So easy to make and they tasted fantastic. You can add whatever you like to suit your taste – I added some button mushroom and will include a little spinach and fetta next time too. Great idea my friend!
